 I love my Instant Pot, and love this cookbook (Beef Bourguinon, Vietnamese Caramel Salmon and the Tangerine Carrots are my favorite recipes so far), I’m just not sure the Instant Pot saved me anytime on this recipe, I browned the onions for around 40 minutes, and even then they probably should have been more brown. The finished soup was good, but I wanted more onion so will add more next time.

Spanish Garlicky Squid + Chorizo

I’m doing a #Whole30 (no grains, dairy, added sugar, alcohol) and it’s been surprisingly easy, largely because I’ve made an effort to make really flavorful meals—carnitas, short rib burgers, chicken pho (sans noodles), and now this Spanish Garlicky Squid + Chorizo from Dinner in an Instant by @clarkbar. This #instantpot dish comes together in a flash and made me want more with every bite. I served it over steamed white sweet potato.
